The Papa Doble Restaurant and Bar, located at 55 Keong Saik Road in Singapore’s Chinatown district, is open for business.
Andrew Yap was the creator of the outlet, taking its title from the nickname of Ernest Hemingway in Cuba (“Papa”) and his fondness for a unique double rum daiquiri that had no sugar.
The cozy speakeasy pays tribute to and draws inspiration from Ernest Hemingway in numerous ways, including his books, past, and passion for bullfighting and folklore.
At the restaurant and bar, you can indulge in delicious Mediterranean culinary creations and sip on inspired cocktails that will bring to life some of the experiences that Hemingway had during his travels.
The signature Papa Doble cocktail (Bacardi Carta Blanca, homogenized peppers, ananas) is just the beginning of the drinks menu. Other popular cocktails include Papa’s Negroni (Bombay Sapphire gin, Campari and Mancino vermouth) and the Bahamas (Bacardi Carta Blanca, Giffard coconut, clarified ananas, lime, coco aqua).
The restaurant and bar dine-in food menu features some special dishes, including Roasted Chicken Drumlets, Pulled Pork Burger, Argentinian Beef Tenderloin Bites, and Glazed Iberico Char Siew.
